Biography
Patrice Demers is considered one of the best pastry chefs in Canada. After 15 years of working in some of Montreal’s best restaurants (Leméac, Les Chèvres, Laloux, Les 400 Coups), Demers opened up his own pastry shop, Patrice Pâtissier in Montreal alongside his wife Marie-Josée Beaudoin. For more than 8 years Chef Demers created desserts in his pastry lab using local and seasonal ingredients. He has also given professional pastry classes with Valrhona in the United States and Canada for the last 9 years.
As someone who loves to share his passion for pastry, Demers hosted his own TV show, “Les Desserts de Patrice” for 5 seasons on Canal Vie and published his fourth pastry book “Parcours Sucré” in 2019. His recipes have been published in magazines including So Good and Fou de Pâtisserie. He has given demonstrations at the Omnivore Food Festival in Paris and in 2018, Chef Patrice was named Best Pastry Chef in Québec by the Lauriers Gala. In 2019, he was selected by Ladurée to collaborate on their Christmas Collection which sold all over the world. Most recently, Chef Demers spent two months as the chef in residence at Fulgurances Laundromat in Brooklyn, NY where he realized how much he missed working in restaurants. Upon his return to Canada, Demers and his wife opened their new restaurant, Sabayon, in Montréal. The restaurant serves an ever-changing tasting menu to 14 guests and is a space where Demers and Beaudoin can combine their passion for food and hospitality.
