Indulge in a one-of-a-kind pastry experience in the heart of Paris, designed specifically for pastry chefs eager to elevate their craft. Spend 3 immersive days learning, tasting, and exploring the art of pastry with Chef Sébastien Trudelle, Meilleur Ouvrier de France (Best French Craftsman) and 5th place winner of the World Chocolate Masters 2009. This exclusive, hands-on class at L’Ecole Valrhona will take you beyond just techniques, as you delve into the philosophy behind Chef Trudelle's exceptional pastry creations. 

This class offers an extraordinary opportunity to not only master innovative pastry techniques but also to gain valuable insights into running a successful pastry business in an international context.

  • Understand Chef Trudelle’s unique philosophy on ingredient selection, flavor balance, and presentation. 
  • Gain insider knowledge on the challenges and rewards of running a pastry business, with a focus on global perspectives and success. 

Class schedule:

Monday, June 16th – Wednesday, June 18th : Class from 9am-5pm (lunch included) 

Thursday, June 19th – Paris Pastry Tour 10am-4pm (lunch included) 

Please note hours may vary slightly.

What’s included:

Dinner Monday-Wednesday 

4-night hotel accommodation with breakfast (check-in Sunday, June 15th – check-out Thursday, June 19th). 

Please note price does not include airfare. Participants are responsible for booking their own travel. 

In the event of a cancellation by L’Ecole Valrhona, we will refund the amount of the course but not the travel (see our full cancellation policy page). We highly recommend booking refundable forms of transportation.

Sébastien Trudelle has been passionate about the art of pastry making since childhood. Awarded the prestigious title of Meilleur Ouvrier de France (Best Craftsman of France) in the Patissier/Confectioner category in 2019, Chef Trudelle has built an illustrious career marked by both professional achievements and competitive success. Born in 1982 in Le Mans, France, his journey includes two formative years working with the renowned chocolatier Franck Fresson in Metz and a notable 5th place finish at the 2009 World Chocolate Masters. 

Today, Chef Trudelle co-owns and directs Smores, a celebrated chocolate and pastry shop in Meerssen (Netherlands), alongside his wife, fellow pastry chef Jennifer Heijnen. Known for his deep connection to the world of chocolate, Trudelle is recognized for his exceptional creativity, technical precision, and unwavering commitment to pushing the boundaries of pastry and chocolate craftsmanship.

If you cancel 45 days or more prior to the first day of class, you will be completely refunded. If you cancel within 45 days you will receive a 50% refund or 100% class credit to be used within a year of the cancellation date. If you cancel within one week of the class you will receive a 50% class credit to be used within one year of the cancelation date. 

We do our best to avoid canceling or rescheduling classes, however, please be aware that classes are subject to change due to conflicts, instructor illness, travel issues, etc. We will contact you immediately in case of any date changes or course cancellations. In the case a class is rescheduled or canceled we offer you the choice of a full refund or a class credit to be used within one year of the cancelation date. 

As Valrhona is not responsible for your accommodations we recommend booking refundable forms of transportation and accommodations, so if an unforeseen change occurs you will not be charged.
